Achar gosht recipe
Ingredients for Achar gosht:

•Mutton 1/2kilo
•Red chilli powder 2Tspns
•Turmeric powder 12 Tspn
•Ginger-garlic paste 2Tbspns
•Garam masala powder 1tspn
•Curry powder 2Tbspns
•Yoghurt 200gms
•Tomato paste 1cup
•chopped onions 2-3
•Green chillies-5-6
•Salt to taste
•Mustard Oil 3Tbspns
•Coriander leaves 1bunch (optional)
•Achar masala 4tbsp

For the bagaar

•Olive Oil 2tbsp
•Cumin seeds 1tspn
•Kalonji 3/4th tspn(caraway seeds)
•Methi 3/4th tspn
•Curry leaves -10 (optional)
How to make Achar gosht:
For Achar masala (1/2 cup)
Dry roast & coarsly grind Rai, Methi dana, Ajwain, saunf, and coriander seeds
Add red chilies flakes, salt, turmeric powder and kalonji.
Mix well and store in a Jar

For Achari Gosht

Marinade the mutton with 2 tbsp achar masala powder,ginger-garlic paste, garam masala powder and yogurt for 2 hours.

Slit Green Chillies from one side in length, take out seeds and stuff with Achaar Masala

Heat the oil till smoking point, let it cool then reheat the oil saute onions till they turn pink

Add meat and sprinkle rest of Achaar Masala on top, saute for 5-10mins
then add tomato's and cook covered till they are soft,

Pour curd and Add sufficient water, (cover with a lid)

Simmer & cook on low heat till meat is tender (or pressure cook for 10-15mins)

Heat olive oil in a seperate pan, add bagar and let it splutter..take care not to burn the methi. Add in curry leaves and stuffed green chillies and fry for a 1 min.

Pour the Prepared curry in the pan and cook till oil starts leaving sides and the gravy is medium thick.
